Ingredients: (makes approx. 14)
- 100g oats
- 50g desiccated coconut
- 150g plain flour
- 100g sugar
- 100g butter or margarine (either works fine in my experience)
- 1 tablespoon golden syrup
- 1 teaspoon bicarbonate of soda
- 2 tablespoons boiling water
Method:
- Put the oats, desiccated coconut, flour and sugar in a bowl and stir together.
- Melt the butter and golden syrup in a saucepan over a low heat.
- Dissolve the bicarbonate of soda in the boiling water, then add it to the butter and syrup mixture.
- Pour the wet mixture into the dry mixture, and stir to combine.
- Line two trays with greaseproof paper. Take a spoonful of the mixture and roll it into a ball. Place on the tray and flatten it slightly with the palm of your hand. Make sure you leave a few centimetres between each biscuit.
- Bake at 180°C for 15-18 minutes, or until golden. Transfer to a wire rack to cool… or scoff straightaway!
