Ingredients: (makes approx. 14)

  • 100g oats
  • 50g desiccated coconut
  • 150g plain flour
  • 100g sugar
  • 100g butter or margarine (either works fine in my experience)
  • 1 tablespoon golden syrup
  • 1 teaspoon bicarbonate of soda
  • 2 tablespoons boiling water

Method:

  1. Put the oats, desiccated coconut, flour and sugar in a bowl and stir together.
  2. Melt the butter and golden syrup in a saucepan over a low heat.
  3. Dissolve the bicarbonate of soda in the boiling water, then add it to the butter and syrup mixture.
  4. Pour the wet mixture into the dry mixture, and stir to combine.
  5. Line two trays with greaseproof paper. Take a spoonful of the mixture and roll it into a ball. Place on the tray and flatten it slightly with the palm of your hand. Make sure you leave a few centimetres between each biscuit.
  6. Bake at 180°C for 15-18 minutes, or until golden. Transfer to a wire rack to cool… or scoff straightaway!
